Notable bits of software that appear to be lost and not lamented in Tiger: Adobe's Acrobat Reader, which isn't needed any longer given the slick, superfast PDF-reading features built into the Safari and Preview programs, and StuffIt Expander.
Perhaps more notable: Internet Explorer, which Microsoft stopped updated for the Mac a long while back. More on this.
And what about the once-ballyhooed Sherlock, which elbowed aside Watson much as Dashboard now is supplanting Konfabulator? That's gone. Will Dashboard be a passing fad, as well?
A longtime tech pal reports this Sherlock link redirected him to the Dashboard page, by the way. It didn't work for me, but here's a Sherlock-in-Jaguar page Apple will probably kill once it realizes it is still live.
